Pre-wash sink:  Consider installing a drop in screen with a pore size ≤ 1/8 inch.

Sink garbage disposal:  A garbage disposal cannot be connected to a grease trap.  Drain screens shall be installed on all garbage disposals, kitchen sinks, floor drains, and mop sinks. Food wastes shall be disposed of directly into the trash or garbage, and not in the drain. Please consider not installing a waste disposal.
